Beyond the grocery store, there is so much more..

Our lamb and mutton offer a taste experience far beyond what you'll find in a regular grocery store. Raised on lush pastures, our Jacob sheep enjoy a diverse diet of grasses, foliage and fruits, as well as a longer than average "hoof life". Their natural foraging regimen and slow maturation rate results in meat with a depth of flavor and tenderness that is simply unmatched.

In winter, our flock weathers serious wind and occasional ice storms. During this time their wool goes into turbo growth mode, they are often pregnant and therefore receive local, high-quality hay and a grain supplement to ensure their nutritional needs are met through hardship and winter growth.

Our flock lambs annually in the spring from late March to early June. They are shorn soon thereafter, as the Gorge climate becomes dry and hot through summer.

How to purchase

We harvest our flock 3-4 times a year, most comminly using a state-licensed mobile slaughter service right here on the farm to minimize animal traffic and stress. Occasionally we process at a USDA plant nearby, and when we do this, retail cuts are available at a premium.

 

You can reserve a half or whole share of lamb (12-24 months) or mutton (2-4 years).  Market rates fluctuate by season and other demand cycles. Our current hanging weight prices are $11/lb for lamb and $10/lb for mutton. The farm pays for slaughter costs and the share buyer pays their cut and wrap fees in addition to their hanging weight total.

 

A deposit is required to secure your share ($40 for a half share or $80 for a whole share.) After proper curing at one of our partner butchers, the meat is cut, wrapped and boxed for deep freeze. A few days later your share is returned to the farm for temporary frozen storage and pickup.
